Optimization of fermentation processes in enset (Ensete ventricosum) production

Abstract
Enset (Ensete ventricosum),
commonly known as the false banana, is a staple food crop in Ethiopia, integral
to food security and rural livelihoods. Fermentation is a critical step in
enset processing, significantly influencing the nutritional value, safety, and
shelf life of the final product. This review aims to explore the optimization
of fermentation processes in enset production by examining relevant studies.
Key factors such as microbial communities, fermentation conditions, and
traditional versus modern methods are analyzed to identify best practices for
enhancing the quality and efficiency of enset fermentation.
