Technological innovations in the production of plant-based milk alternatives

Abstract
This paper examines the technological
advancements that have significantly influenced the production of plant-based
milk alternatives. With a growing consumer demand for sustainable,
health-conscious, and ethical food products, the industry has seen rapid
innovation in methods of extraction, processing, and fortification. These
innovations not only improve the sensory and nutritional profile of plant-based
milks but also contribute to environmental sustainability. This study aims to
explore these technological developments, their implementation in current
production processes, and their impact on the market.
